I got this beauty of a pumpkin from the children in Namioka school last wednesday and decided while I was cycling it home that Auntumn had arrived! On sunday night while the rain poured I decided to crack it open and roast it for a Plumpy Pumpkin soup. Mid chop I discovered I had no blender, I was determined to make it so I cycled 15mins to GalaTown shopping centre bought my blender and cycled 15mins back. From head to toe I was covered in rain gear, I arrived in to the house dry but my face and hands were cold from the rain. The only cure, a bowl of soup!
To make it yourself;
1 large pumpkin
1 onion
3 potatoes
3 cloves of garlic
1 stock cube
Salt & Pepper
Chop the onions and garlic up small, sweat them in olive oil till the onions turn see through.
Roast the pumpkin in the oven until it is soft.
Add the stock (which is diluted in boiling water) and then the roasted pumpkin
Add salt and pepper
Cover and leave to simmer until the veggies are soft (20mins approx)
Blend (or not) and Enjoy
